Throw away if they are light-weight or open. It means they have lost their liquor and will be shriveled up and dry.  Oyster lore recommends eating oysters only in months that have an R in the month’s name but with today’s aquaculture technology, they are safe to eat year-round!

Preparation:
Shuck ‘em and Suck ‘em.  Best served on ice with a Mignonette or Lemon and Hot Sauce.
