COLOSSAL ALASKAN KING RED CRAG LEGS (ALASKA, WILD-CAUGHT)

Preparation:
Crab Legs always come in frozen and pre-cooked.  You just need to thaw and warm them. For thawing, you can either thaw them in the refrigerator overnight or under cold-running water.  For the Colossal Kings, begin by running the water over the joint. Once that is thawed, you can fold it in half so that you can thaw it more easily in your sink. Move it around occasionally so that the running water hits everything. This usually takes about 10-15 minutes.  You know it is thawed when the knuckle is firm not frozen.

To cook:
Get a VERY BIG pot of boiling water.  If your pot isn’t big enough to fit the whole leg in folded, you can cut it or break it at the joint and warm it in two pieces. It will be hot in 3-5 minutes.

To Grill:
Follow the thawing instructions.  Split the leg in half with a large kitchen knife.  Put it on a hot grill shell-side down to warm it up. You can baste it with butter if you would like.  Grill 3-5 minutes or until warm.

To Serve:
Cut the shell with a kitchen shears and pick out the sweet, delicious meat. Butter and lemon is always a delicious accompaniment but really the meat is so amazing, it doesn’t really even need it.
